So apparently the Kitchn had us beat to finding healthy snacks for our superbowl parties. Here's one that looks good to me:

wait- why are you not eating potatoes? if you buy a potato at the store, and cook it- that's not processed. so why are you not eating potatoes!
ReplyDeleteI'm guessing that Week 1 recipes stay away from potatoes because though they are a vegetable they are pretty starchy (aka sugary), heavy and they may not be as nutritious as say, a sweet potato (which seem to come back on Week 2). Not sure why they don't introduce later in the month though - it is a vegetable, gluten free, and not processed.
